Victor Garvey at The Midland Grand, King’s Cross: French Haute with Theatrical Flair

Last week, I slipped into the stunning dining room of the St Pancras Renaissance Hotel and discovered Victor Garvey, the Michelin-starred chef behind Soho’s Sola, serving up bold, French-inspired tasting menus that are as much theatre as cuisine. It’s haute cuisine in a historic setting, and every moment feels carefully curated.

Let’s talk food

Garvey brings precision, creativity, and drama to each dish—think sashimi-grade amberjack to lobster, to quail stuffed with boudin noir, finished with tableside flair. The seven-course Menu Experience (£139) is a triumph of balance, elegance, and unexpected flavour pairings; the twelve-course Menu Gourmandise (£179) goes deeper into culinary artistry. Portions are refined, serving up bursts of flavour and visual theatre rather than banquet-size plates.

You can tell by the photos that the presentation was like a work of art and each dish was carefully constructed, esoecially the quail dish. The only thing that felt disjointed with The Midlands is that the servers were very young and quite a contrast to the traditional vibe of the restaurant and overall venue. – It felt a bit stiff to dine in.

The Midland Grand dining room is opulent yet inviting: soaring ceilings, velvet seating, marble accents – it’s a feast for the eyes. Despite its grandeur, Garvey’s energy brings a warmth that transforms the space from museum-piece into dining room with soul .

Garvey brings his Californian soul and French artistry into one of London’s most iconic settings. Critics agree, it’s a “triumph” that marks “the beginning of something spectacular”. And yes, it’s lavish – but the staff and the place feels misplaced – It looks like they’re trying to bring a modern crowd to a very traditional fine dining experience..
